Fermenting knowledge for its transfer

From Leartiker's Food Design area, we are working on one of the most ambitious and transformative internal projects of recent years: Transfer FERMATEC (TRANSFER for FERMentation, Applications and TEChnology in the development of new foods). This project has born with a clear vision: to generate technical-scientific knowledge on fermentation processes applied to different food matrices, and to transfer it to the agri-food sector to promote the creation of healthy, sustainable products with added value.

  

Fermentation is one of the oldest food preservation and transformation technologies, but also one of the most promising for the future. At FERMATEC we are exploring its potential from an innovative, rigorous and applied perspective. We work with mixed fermentations for the development of beverages, lacto-fermented vegetables and fungal fermentations to obtain foods with umami flavours. All of this, using local and seasonal raw materials, and with the support of a cutting-edge infrastructure: our new fermentation process control station, already operational in the Leartiker laboratories.

  

 

Beyond the laboratory

FERMATEC does not stop at the laboratory. The project includes intense transfer, training and dissemination work.

We have already begun to weave a network of collaboration with producers, experts and centres of reference that can contribute their vision of fermented foods. In addition, we are preparing a series of training and dissemination activities that will be deployed in the coming months: workshops, showcookings and webinars, as well as a technical conference that will bring all this knowledge to professionals in the sector and also to the end consumer.

FERMATEC is more than just a research project, it is a commitment to food innovation based on sustainability, health and the valorisation of the territory. An initiative that seeks to position the Basque Country as a benchmark in the production of new generation fermented foods.
