Description

The GASTROFERM project aims to develop and commercialize a low-alcohol fermented beverage produced from apple cider pomace. By employing non-conventional yeasts and mixed fermentations, the goal is to create a range of beverages that adapt the gastronomic offer of the cider sector in Gipuzkoa to current consumption trends, which increasingly seek healthier alternatives to alcoholic drinks.

Activities carried out by Leartiker

LEARTIKER will participate in the project by producing pilot-scale prototypes, designing and monitoring the fermentation process, and providing scientific-technical consultancy. Additionally, LEARTIKER will be responsible for validating the products and their shelf life, as well as defining the requirements for quality and food safety.
