Description

The primary goal of this project is to use the meat from mature laying hens to make pickled chicken using Basque-produced apple cider vinegar.

The project will develop a range of innovative pickled poultry products, making it possible to launch new products made from local raw ingredients and creating new business opportunities and niches.

The specific objectives of the project are: (1) to develop special vinegars based on apple cider vinegar; (2) to develop a range of pickled products using laying hens.
