The objective of the DAIRITAL project is to develop capacities for smart specialisation, industrial transition, and entrepreneurship within the traditional dairy production and processing sectors of the SUDOE region. To achieve this, the project will:

• Analyse the impact of ecological transformation through the reuse of endogenous resources, digitalisation, and the application of new technologies in the sector.
• Assess the economic, social, and environmental impacts of implementing more sustainable and digital production models in the sector through two pilot actions.
• Develop a training plan aimed at the sector to facilitate the transition to ecological and digital production models, thereby enhancing professional skills and improving living conditions in the rural areas of the region.
