The identified opportunity lies in transforming cuts of meat with low commercial value into an innovative, high value-added jerky-style product that does not require refrigeration and can be easily distributed through convenience outlets, vending machines, specialist retail outlets and sporting events, providing an alternative to the distribution of traditional meat products.
