Description

HEZUR EZ GEZUR is a cooperative innovation project to develop a completely new and sustainable product based on the use of a food by-product (chicken bones) and promoting zero waste. This cooperative project will be carried out by the company DELIKATETXE Kooperatiba Elkarte Txikia, the LEARTIKER technology centre and the BASQUE FOOD LABORATORY culinary innovation centre.

The main aim of the project is to use a by-product (cooked bones) from the production of chicken stock by the company Delikatetxe by creating a new range of products.  For this purpose, a new processing procedure will be developed to facilitate the inclusion of animal protein in different types of products.
