Description

TECAM is a collaborative research project for the food sector whose main objective is to research and identify different technological solutions to help determine the presence of potential natural or opportunistic components capable of endangering human health and that may be present in commercially available foods, in order to prevent cases of food allergies and food poisoning.

For this purpose, following a multidisciplinary approach, various conventional and disruptive detection technologies, both direct and indirect, will be researched in order to obtain information that will help ensure food safety. In terms of disruptive technologies, rapid analysis systems based on digital microfluidics, near-infrared spectroscopy (NIRS) and artificial intelligence will be designed to provide portable and in situ detection devices for allergens and pathogens.

  • Research on the epidemiology of food allergies, food labelling legislation and standardised quantification methods for allergens and pathogens of interest.
